Had another Ocular Migraine

So I think I got this diagnosed correctly. I had another ocular migraine at my daughter’s birthday party yesterday. This time it was accompanied by a really bad headache. This is the first time I’ve had this happen when I’m out and about. It basically begins and my vision gets really blurry and I can’t make out people faces or objects. It really messes up my vision and basically makes me inoperable. This time it was also accompanied by a bad headache that is still lingering a bit today. It also causes usually causes me to want to throw up, I guess I get some nausea from it. Or just the fact that something is really wrong in my brain is causing me to freak out, which is probably the case. Thank you Trader Joe’s, best damn Quesadillas

Let me just start out by saying I work from home, which gives me the opportunity to make some good meals on my lunch break. I love that aspect of it. I’m not making something in advance, like a sandwich that will be warm or throwing money away every day walking over to Chipotle, Habit, or Togo’s. So one of the quick things I can do during lunch is make a nice Quesadilla. Its quick and tasty. I think I’ve found my awesome ingredients too, thanks to Trader Joe’s. They have this Pepperjack Cheese and a bag of Frozen Carne Asada beef. And some damn tasty, as in authentic testing, real tasting, tortillas. Throwing these together is quick, takes me like 5 minutes, and is really really good. I suggest it. Stop by Trader Joe’s or even any grocery store and get some Pepperjack cheese. If you have a Trader Joe’s get some Tortillas from them, they look homemade, and some Carne Asada beef to warmup in advance. And you have a delicious meal.

Want to mix it up? Grab the trust Cast Iron skillet, red peppers and red onions, and some olive oil and cut them up fajita style. Throw those on for a loaded Quesadilla, its awesome. How long do you cook those? Well you cut them up, throw on the oil on the hot pan, spread around, throw the veggies down. Maybe 10 minutes with some salt. The onions will start to look a little brown and/or clearing and thats it.
